In fact --
IF you aren't interested in the quick breakdown feature and not too concerned about cosmetics -- it can be extremely easy.
About 6 - 8' 1x4's (or 2x4's if you wanted sturdier) cut into 2' and 3' lengths (which you could probably get the big box to do for you) and just screwed together.
Total cost for lumber and screws about $20.

Me -- I tend to get a little fancier --
So I would probably lap joint the uprights to the legs -
Then dado the top brace in.
For the bottom I would get some plywood and build a cabinet which would supply considerable extra bracing -- and storage (which I never have enough of).

As for height -- it's your table - make it comfortable for you.
Rule of thumb you will find mentioned is to stand easy and bend your arm 90 degrees at the elbow and measure down from your hands.

These are just off the top of my head ideas sketched out while I am supposed to be doing something else. I have no doubt there are details that need adding - they are for brainstorming purposes only.
