Is there a maximum size for panels before you have to start using edge glued panels as opposed to just making it out a leftover piece of wood? Length or width...

I would suggest no more than about 6" wide boards for panel glue ups. My reasoning for this is that the wider boards tend to warp easier. I am by no means an expert on this but, I did stay at a Holiday Inn last night.

The tree rings will tell you all you need to know..
You don't want them,,,in the center, it works very well if you use 2" to 2 1/2" wide the norm...just flip them over and glue them up, the wider the stock the bigger the cup..this is true for women also it all falls in to place.. mother nature is just that way...

Some use the 6" rule but if the tree was only 8" to 10" in dia. well you see what I mean.

I don't know of any hard and fast rules but I typically make all panels over ~5" wide from glue-ups. The width of the pieces I use is most times the same as the width of the stiles and rails (usually 2-1/4" for cabinet doors) because I rip all components at the same time..
