Default Outdoor cooking

I don't know how many here enjoy outdoor cooking on a grill or smoker, but it is my 2nd most favorite hobby. I own 2 Big green Egg cookers and cook several times a week on them. Tonight I did some bone in chicken breasts with a nice rub on them. Here is how they turned out. How about those that enjoy outdoor cooking, sharing some of your cooks.

Howdy Glenmore and nice to see you post. That is one serious grill and looks like it will hold a ton of food. Rumor has it that you are a crack cook on one of those.

Living here in Sportsman's Paradise, nothing like some grilled Red fish on the half shell and zucchini!!

I'm not to shabby still learning a lot like the charcoal for smoking wood experiments. I got to get you and your Mrs. up here one day.

Just finished a Big Green Egg Table for 2 eggs, for a friend. Pics attached.

Looks like a good meal there Lee. I do a lot of salmon on my rigs and it is great.

Glenmore, get you some lump charcoal if you haven't already and learn to cook with it. No comparison!

Beautiful twin egg table and I know your friend will enjoy it. I see you have a concrete slab cut out for a buffer between the egg and the wood. Really nice job!

I grill, cure, and/or smoke meats. For grills, I have both charcoal and gas: respectively, a 22˝" Weber One Touch and their Summit model S470, that I upgraded to last summer. I also have a basic Bradley smoker that's seen a lot of service. In fact, I'll be making pork barbecue this weekend with it.

A few samples...

Left to right:

Smoked turkey breasts—I usually brine these overnight and smoke them with applewood.

Canadian bacon—this was my "gateway drug" into curing meats. We haven't bought a commercial package of CB since I started making this years ago.

Kielbasa—curing and hot smoking this and summer sausage were my next steps in curing meats.

Tuscan salami—the biggest step in sausage making was the fermented/dried style. It is by far my favorite.
