1-1/2 inch pine, what roundover bit?

hypothetical question i'm looking to turn my square 1.5 inch lathe stock to round, however i don't want the diameter to be less than 1.25 is it wise to use aroundover bit, and what size should i use

Please tell us a little more of your project. How many pieces do you want to process ? Are you going to turn them on a lathe after you do the roundover ?

If this is your 'lathe stock', can't you turn it on the lathe?
What is the lenght of the stock?

On 1.5 inch stock, a 3/4 roundover will give you a 1.5 inch diameter dowel or rod. You can trim about 1/8th inch by turning to give you the 1.25 you're looking for. You'll probably get a little tear out on some passes (against the grain and end), so start with a little extra length on your square stock. Send the 1-1/2" pine thru a 13" thicknesser (AKA Planer in USA) reduce to 1-1/4" square (can do 8 sticks at a time together)
Then 5/8" radius round over router bit (4 times on router table) would give a nice 1.25 diameter round rod

Exact radius round over bits won't give a smooth cylinder. The guide bearing will be riding on a curve for at least two of the passes and give a noticeable offset. 1.5" square stock is best rounded with a 5/8" diameter bit and the rest can be done on the lathe.

Remember the router table has a fence.
So it is possible to get a smooth cylinder if we start with a smooth square.rod.
We can also use a 5/8" Half round router bit instead.
(manual wood lathe would be slower but GUIDED copy lathe or CNC Lathe will be OK)

I make these from 2's and such. I use a 3/4" round-over bit. After the first side is done, the bit will drop down the other side, resulting in a ridge. You can switch from the bearing that follows a straight side to a larger bearing to reduce this problem.

This very valid question has yet to be answered and thus we are left to speculate.
Back when I was doing a lot of turning for others and I'd get a baluster job, I'd use a make shift router table to round over the edges in the middle of a stick. This significantly reduced the vibration of the roughing out process and made things a lot smoother on the hands when using the left hand as a steady to get a rounded steady rest area.
I don't have photos of my router setup because it was little more than a long piece of plywood with a router stuck under the middle. It was really helpful and made a spindle job go much quicker and easier.
