just to give a simple answer: yes, it is possible to "build" a car hauler out of wood. just google: wooden toy car hauler for examples that you may like.
it just depends on the end use and how much detail you want to put into it.
when you say: "carve a truck", do you mean design and make with a CNC?, or, carve by hand. what does your "carving creatively" consist of mostly ?
a quick google search for Peterbilt Truck Plans turned up a few sources to purchase the plans. just beware of the suspicious sources such as "Ted's Free Plans". it is more trouble than it's worth.
one source that looks good is AOBI Workshop. of course, you would have to check them out.
they have a 33 page PDF set of plans you can buy and print yourself for $14.00.
