Cutting board and dovetail joinery

Has anyone ever used through dovetail joinery in making a long grain cutting board? I would like to try this for design effect but have no previous experience with dovetail joinery and the possible negative effects that washing the board off with water may cause. I have seen numerous cutting boards that are butted and glued. Any feedback would be appreciated.

As long as you are using a glue like Titebond 3 which is waterproof and approved for this type of application you should have no problems. If you are using different types of wood for contrast be sure they have similar properties; such as walnut and red oak. Always check out the properties of exotic woods before using them in a food related project, some are highly toxic.
Sounds like a good idea and should look more interesting than your typical straight joints - maybe post some pics after you're done!
