hi, im looking for advice on how to paint a baltic birch plywood canopy to surround a gas range cooker it needs to be moisture resistant and to resist slight heat.

I would recommend a good coat of base primer to seal the plywood then 2 coats of High Gloss Latex Enamel so you can clean up quick and easy, after you get done with the paint job and when you cook around the new canopy.
