Router Throat Plate Requirements

I am building my first router table. The router plate comes with three throat plates with holes of 1”, 2-1/8” and 3-5/8” in diameter.

A filler set of other sizes throat plates (3/8", 5/8", 7/8", 1-3/8", 1-5/8", 1-7/8", 2-5/8" and 3-3/8") as well as a Porter Cable guide bushing ring are available. I can purchase them individually or as a set. They set at $60 is only $4 less than the individual plate price. What is your recommendation?

I plan on making cabinets/furniture as well as small boxes (maybe ranging from 5" x 7" x 1" to drawers) as well as making architectural mouldings for remodeling our home.

How much clearance is recommended between the bit and the plate?

Will these ones from Lee Valley fit in a PC adapter plate? DO you think the entire range I listed in my original post are necessary? The set from Lee Valley only covers the sizes under 1". By the time I add the others, it will cost more than the $60 set price.
