The jig is very good but limited to around 18mm thickness of wood for the pin board. Is it possible to fit a longer dovetail bit to reach 24 to 25mm thickness approx 1 inch for the pin board onto this jig?

I haven't done it but don't see why it wouldn't work. The template guide size may need to be adjusted.
Welcome to the forum, Michael.

I use a Gifkins Jig, but they only go to 22mm from what I see.

For 25mm I would look at hand cut dovetails?
I am not certain about the pins. I know you can use 1" stock for the tails
