Default Simple wood finish?

Here's my plan: two or three coats of shellac, maybe more, well sanded. Then a couple coats of gloss poly, maybe even from a spray can. What do you guys think? No extreme weather exposure involved. I really like the look shellace gives, even to plywood.
Othe than paint I am not inclined to be a finish kinda guy if you know what I mean.
Hey! I never said I was a cabinet maker. Until two years ago I thought a "table saw" was something you used on a tough steak!!

Two things. One forget the polyurethane varnish, two lightly sand the shellac with 320 grit ,only enough to smooth.

Sounds simple enough and I like shellac. But will it watermark?
