Cheese Boards from "exotic" woods with a question

I recently purchased a bunch of off-cuts of various exotic woods. Included were short lengths from counter tops and such. I glued a bunch up to make some cheese boards as gifts and as sale items for a fundraiser. They are finished with mineral oil (3 coats) except for one which has four. Never having used this as a finish before, my question is simply is three coats appropriate? I read somewhere that three is recommended but now I am wondering.

I haven't used mineral oil but it was something that may have had mineral oil in it (Naturol or something close). My understanding of it was to keep applying until it wouldn't absorb any anymore.
